Heat the oil in a kadai, splutter mustard and Cumin seeds, add pinch of hing, Curry leaves,.
Next add chana dal, Ginger garlic paste, Green chilli chopped saute well.
After add finely chopped onion stir fry them till the colour changes.
Further more add finely chopped tomato saute till they turns mushy.
Next add spices turmeric powder, chilli powder, Garam masala saute until they becomes aromatic.
Now add chopped carrot and potato then add 1 cup water mix well.
Cover and cook till they becomes soft.
Now add boiled Peas, chopped coriander leaves, and salt according to taste mix well.
Close the lid and simmer for few seconds.
Now serve Gajar Aloo matar ki sabzi with chapati, rice etc
